This creamy garlic pasta is a simple, comforting meal made with tender pasta, fragrant garlic, olive oil, and a rich, silky sauce. It comes together quickly and is perfect for an easy weeknight dinner.

Ingredients

  • 12 oz (340 g) pasta
  • 4 cloves garlic, finely minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup (240 ml) heavy cream
  • ½ cup (50 g) grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Method

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain.
  2. Heat the olive oil and butter in a large skillet over medium heat.
  3. Add the minced garlic and cook for about 30 seconds, stirring constantly. Do not let the garlic brown.
  4. Pour in the heavy cream and stir gently. Simmer for 2–3 minutes.
  5. Add the Parmesan cheese, salt, and black pepper. Stir until the cheese melts and the sauce becomes smooth.
  6. Add the cooked pasta and toss until evenly coated. If the sauce is too thick, add a little reserved pasta water.
  7. Remove from the heat and sprinkle with fresh parsley.
  8. Serve immediately while warm.

Recipe Notes

For a smoother sauce, add a small splash of reserved pasta water before serving. The pasta is best enjoyed immediately while the sauce is creamy and warm.
